 simple recipe for Katta Dried Fish Theldala:

Ingredients:
200g dried Katta fish
1 onion, sliced
2-3 green chilies, sliced
1 sprig curry leaves
1 piece of rampe (pandan leaf)
1/4 tsp turmeric powder
1/2 tsp chili flakes (optional)
1 tbsp oil (preferably coconut oil)
Salt to taste
Instructions:
Prepare the Fish: Soak the dried Katta fish in water for about 10-15 minutes to remove excess salt. Drain and cut into small pieces.
Heat the Oil: In a frying pan, heat the oil over medium heat.
Fry the Fish: Add the dried fish pieces to the pan and fry until they turn golden brown and crispy. Remove and set aside.
Sauté the Aromatics: In the same pan, add the sliced onion, green chilies, curry leaves, and rampe. Sauté until the onions become tender.
Add Spices: Add the turmeric powder and chili flakes (if using). Mix well.
Combine: Add the fried fish back into the pan and mix everything together. Cook for another 2-3 minutes.
Season: Adjust salt to taste and remove from heat.
Serving:
Serve hot with plain rice and enjoy your delicious Katta Dried Fish Theldala!
